A couple of months ago, I was scrolling through my Instagram feed, throwing out likes for engagement rings and new tattoos when I was suddenly confronted with a quivering plate of eggs florentine — cracked pepper on lurid hollandaise on snow white egg on spinach a foresty shade of green. A fork descended and split the egg. Yolk, everywhere.
It was a bit of a turn-off, I won’t lie to you. These days, I feel the same way about bright yellow yolk as I do when I’ve said a word so many times that it no longer makes sense. Yolk is no longer the deliciously rich and silky centre of an egg to me. It is #yolkporn, a hashtag with over 300,000 posts on Instagram. Because hey — if you didn’t film the yolk as it oozed all over your florentine, did it even happen?
